I am both gluten and dairy intolerant , my youngest son was horribly allergic to dairy until his teens and my husband is diabetic, so I have long had an interest in food and nutrition. I have also spent more than my fair share of time in the ‘free from’ aisles and never fail to be amazed that removing an allergen also seems to involve removing both the taste and the texture!!
Safeguards
In our kitchen we are all very aware of the problems of cross-contamination, particularly with gluten, so we have various safeguards in place and do random testing to ensure that these are working. Gluten baking days are Monday and Wednesday and non-gluten baking days are Tuesday and Thursday. Unfortunately there are so many nuts used in the kitchen no cakes can be guaranteed nut free.
Despatch
When you order a cake it will be baked on the next appropriate baking day and dispatched as soon as possible by first class post. If however you need a cake in a hurry do contact me.
